After you have gathered all of the ingredients, you will want to start adding them to a mixing bowl. Put the 4 pounds of either ground pork or beef and 1/2 cup of onions into the bowl.

Some people prefer to put diced green onions inside their lumpia, but this is simply a personal preference. This ingredient is optional.

Now you will want to add three eggs to the bowl.

Put in 3 tablespoons of soy sauce, 1 tablespoon of salt, 1/4 tablespoon of ground black pepper, 1 teaspoon of garlic, and 1 teaspoon of onion powder.

Now you will need to mix the ingredients together inside the bowl. It is best to mix the ingredients using your hands to ensure that everything is thoroughly mixed. If a spoon or spatula is used, the meat may have large clumps and that will make the lumpia uneven.

After everything is mixed, you will want to add 1 cup of shredded cheddar cheese.

The next step requires Spring Roll Shells. These are sold at almost all Asian and Oriental stores for about $2 for 25 wraps. This recipe calls for 50 wraps, so make sure you have enough.

Now you will need to crack 2 eggs into a separate cup or bowl. Also, you will want to make sure you have a barbecue brush.

Now you will need to separate each Spring Roll wrap to make them less clingy... You can stack them back on top of one another after you initially peel them apart, but this process ensures you that they will not get stuck together during the next step.

Use a butter knife to scoop a little bit of the mixture onto the lumpia wrap.

Spread the mixture onto the Spring Roll wrap... Make sure you only fill up about 1/3 of the wrap with ingredients.

Start by folding one side of the wrap onto the mixture.

Continue rolling the lumpia wrap until you have about 1.5 inches of the wrap remaining.

Using your barbecue brush, spread the eggs onto the remaining 1.5 inches of the lumpia wrap then fold that part over the rest. After it is completely rolled up, press the ends of the wrap to keep everything inside. Continue this process with the remaining 49 wraps. Remember that you do not have to cook them all right now... After you have them prepared, you can put them into the freezer.
